Trehalose is a non-reducing disaccharide composed of two glucose molecules connected by an α,α-1,1-glycosidic bond. It is known as the “sugar of life” for its unique biological properties (such as resistance to dehydration, resistance to freezing, and stability of biological macromolecules).

1.Food industry (most widely used field)
1)Baked products
Function: prevent starch aging (such as bread hardening), inhibit protein denaturation, extend shelf life; reduce sweetness and highlight the original flavor of ingredients.

2)Candy and chocolate
Function: form a non-hygroscopic protective layer, moisture-proof and anti-sticking; low sweetness (45% of sucrose sweetness) and anti-caries, suitable for “tooth-friendly” products.

3)Beverages and dairy products
Function: mask bitterness (such as beany, tea astringency); provide lasting energy, smooth blood sugar fluctuations (suitable for sports drinks).

4)Frozen food and preservation
Function: lower the freezing point, inhibit protein denaturation during freezing; maintain the elasticity of seafood/meat, and reduce the loss of juice after thawing.

5)Condiments and processed foods
Function: inhibit lipid oxidation (anti-rancidity), stabilize the color of sauces; reduce kimchi browning, and maintain the crispness of fruits and vegetables.

Used as a stabilizer for antibody drugs, vaccines, and cell therapy preparations to prevent protein inactivation when stored at room temperature. More than 35% of the marketed antibody-drug conjugates (such as Adcetris and Trodelvy) use trehalose.
